Sweet & Savory

With the Easter holiday around the corner many of us are planning to attend brunches, dinners, or parties where we are asked to bring a side or dessert.  Most often at these social gathering people just want a taste of something sweet.  We're all feeling the need to shed our winter weight and big servings of sugary sweets just aren't on the agenda.  These cake bites are the perfect size to enjoy the holiday without over indulging.  You can satisfy the need for a sweet treat without the guilt.  Sure to please the kiddies and adults this tasty dessert is a great addition to any occasion.

Easter Sweet Morsels


1/4 cup (4 tablespoons) butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
2 2/3 cup all purpose flour
1 cup milk


1/4 cup milk
1 teaspoon vanilla extract
2 cups confectioners sugar


Preheat oven to 325°.  lightly grease doughnut hole pan and set aside.

In a large mixing bowl cream butter, sugar and oil.  Slowly add eggs one at a time and mix until incorporated. Mix in baking powder, baking soda, salt and nutmeg.  Mix until fully blended.  Slowly alternate adding flour and milk and mix until batter is smooth.

Spoon batter into pan filling holes 2/3 of the way full.  Bake for 12-15 minutes or until you can insert a toothpick in the center and it comes out clean.  Let cool in pan for 5 minutes then transfer to cooling rack.

To decorate simply mix the ingredients for the glaze and dip the tops of the bites into the glaze and then apply whatever colorful candy decoration you wish.
