This weeks Sweet & Savory recipe is a simple and delicious salad to kick start your Spring eating plan. Berries are in full swing and these small fruits are packed with vitamins and minerals. Create a super nutritious meal by topping some power greens with these sweet treats. I make a Dijon vinaigrette to give a little bite to compliment the sweet of this salad. Add chicken, nuts and cheese to create a more substantial meal. Either way this simple delicious salad is a great way to give your body the boost it needs to enjoy all the warm weather and activities of the season.
Very Berry Salad
Power Greens (Swiss Chard, Kale, Spinach)
Strawberries - sliced
Nuts and cheese are great additions to this salad.
For my Dijon Vinaigrette simply combine 1 tablespoon olive oil, 1 teaspoon Dijon mustard, 1 teaspoon white wine vinegar. If you want a less bitter dressing just add a little more olive oil to balance out the taste.
