Happy Friday everyone! It's officially spring! Soon we'll be opening all the windows to fill the house with fresh air and light. After this horrific winter I may actually shed a tear that day. With the warm weather comes cravings for spring flavors and nothing screams spring like a lemon. These cookies are a great way to celebrate the new season and get you geared up for the upcoming Easter holiday. They are the perfect balance of sweet and tart. Bubba doesn't usually go for tart treats, but he fell in love with this cookie. With this simple recipe you can whip up a batch in no time. If you don't have cake flour you can use all AP Flour for this recipe. I like to cut it with cake flour because I believe it makes a better cookie, but I leave that for you to decide.
Pucker Up Lemon Cookies
Ingredients
Cookie
1 cup + 1 tablespoon all purpose flour
1 cup + 1 tablespoon cake flour
1 tablespoon corn starch
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup butter, softened
1 + 1/4 cups granulated sugar
Zest of two lemons = 1 1/2 tablespoons
1 large egg, room temperature
1 large egg yolk, room temperature
2 tablespoons fresh lemon juice
1 + 1/2 teaspoon vanilla extract
Lemon Glaze
1 cup confectioners sugar
2 tablespoons fresh lemon juice
Directions
Preheat oven to 350°. Line a cookie sheet with parchment paper or silpat and set aside. In a separate bowl mix flour, cornstarch, baking soda and salt. Set aside. In the large bowl of standing mixer (or bowl for hand mixer) using the paddle attachment cream the butter, sugar, lemon juice and lemon zest until pale and fluffy. One by one mix in and fully incorporate large egg, yolk and vanilla extract. Slowly add in dry mixture. Stop from time to time and scrape down the sides. Mix just until just combined. Use a spoon to scoop dough out onto cookie sheet. Bake for 9-11 minutes.
Lemon Glaze
Mix confectioners sugar with fresh lemon juice together. If you would like a thinner icing simply add a little lemon juice at a time to achieve correct consistency. Place in a sandwich bag a fully seal. cut a small corner of the bag and use to pipe glaze on cookies.

ReplyDeleteI have a question...are you saying to use both flour AND cake flour OR one or the other? And if you are saying to use two cups of flour can we use regular AP flour for both of those cups plus the little bit additional? Just curious! Thank you.

DeleteYes, I'm saying to use 1/2 AP flour and 1/2 cake flour. I've broken it down for you in the recipe. If you don't have cake flour it's perfectly OK to use all AP flour. I just think cake flour makes a better cookie.

ReplyDeleteYou list two tablespoons of lemon juice in the cookie ingredients but then don't include them in the making of the cookies. So does that just go in when I put in the eggs, vanilla, etc?
