Some of y'all in the south are already seeing signs of spring. Warm weather will -fingers crossed- quickly be upon us and I'm beyond excited! With the wonderful weather comes bathing suit season. Being stuck indoors for the last four months has left me pasty and a little plumpy. It's time for some healthy maintenance to prepare for the season. I've already started back on my old exercise regimen. Now it's time to put away the winter comfort foods and replace them with healthy meal and snack options. During my hunt to refresh my menu I came across this smoked salmon wrap and knew I had to try it. Not only are these delicious, but they inspired me to be creative with different versions of this wrap.
With this simple idea you can create a delicious snack with some of your favorites from the fridge. Ever since I made these I've been thinking about a version with turkey bacon, guacamole and a little cheddar. This is a snack you can build to suite your needs and the options are endless.
Smokin' Snack Wrap
5 large romaine lettuce leaves - ribs removed
5 strips smoked salmon
5 cherry tomatoes - quartered
1/4 cup fresh dill - stems removed
2 tablespoons fresh chopped chives
1 tablespoon chevre goat cheese
1/2 of a lime - juiced
1/4 teaspoon sea salt
cracked black pepper to taste
In a bowl or glass add avocado, goat cheese, lime juice, salt and pepper. Use a fork to mash and mix the ingredients until blended but still chunky
Spread avocado mix down center of romaine leaf. Top with smoked salmon and a few of the cherry tomato quarters. Sprinkle with dill and chives. Starting at one end tightly tuck and roll the leaf to create your wrap. When completely rolled secure wrap with a toothpick.
